The victim suffered serious injuries during the attack at the seafront venue just before 5am on Saturday.
Police praised the prompt actions of staff in helping the man, who is being treated at Addenbrooke's Hospital.
The 31 year old, from the Yarmouth area, has regained consciousness, but remains in a critical condition.
Four men arrested in connection with the incident remain on police bail until Friday, November 28.

A spokesman for the venue said: “This was an isolated incident, we spend a substantial amount of time and effort ensuring that our customers enjoy themselves and are safe whilst they are in and around our venues.”
Officers want to hear from witnesseses or anyone with information about the assault.
